Iconic Schnitzelburg store re-opening as new bar and restaurant – WLKY

LOUISVILLE, KY —
The iconic big red sign on the corner of Goss Ave and Hoertz Avenue in Schnitzelburg will once again shine bright with the name “Hauck’s” across it.
The over 100-year-old convenience store closed its’ doors in 2019, and now, after undergoing major renovations, it’s opening once more. This time, as a bar and restaurant.
“There’s just so much history here,” said Jeff Walschon, co-owner and leader of the renovation. “The vision was to be able to recreate the space. With a different layout and purpose, but we want people who have spent a lot of time here in the past to come in and still feel the same vibe.”
The renovators were able to save and refurbish a majority of the walls, floors, decorations, and even the doors, which are now being used as tables. There is even a 12 feet tall coca-cola sign that was salvaged from the side of the building that now is hung on the wall of the dining room.
Management hopes to appeal to older generations that have enjoyed the store for years, while also attracting younger generations.
“Schnitzelburg is a melting pot.” said co-owner Craig Priddy. “This new young generation, the old generation, they all live in one area and we want to appeal to every one of them. We want someone to come in that has history here, and we want a younger generation to come in and create their own history here.”
Hauck’s Corner bar and restaurant will open at the end of July, just in time for the Dainty. A Schnitzelburg tradition played on the last Monday of July, was started by George Hauck in the early 1970s. What was once only a night of playing Danity, eating a bologna sandwich and having a cold beer, is now a three-day celebration of all that Schnitzelburg is. Hauck’s will be open on Sunday, July 24 for the first time to the public.
